Background and Context

The first contact came through a trusted recommendation. A mutual friend of the owners and Upgreat suggested the company when those responsible for Fábrica da Picanha were seeking a partner to support the launch of their first restaurant.

The first location opened in Odivelas, very close to Upgreat's office. It was a demanding investment for a new restaurant brand, requiring cost control, sound technical decisions, and setting up a functional kitchen from the outset.

The Operational Challenge

The initial challenge was to help the client open their first restaurant with an appropriate technical solution, within the normal constraints of an initial investment.

It was necessary to equip the kitchen, bar, and support areas, integrating reliable solutions tailored to the restaurant's concept. At the same time, it was important to create an operational foundation that could evolve and be replicated in future units.

As the chain grew, new challenges arose: adapting the initial solution to different spaces, improving operational details, increasing service efficiency, and creating more customized solutions for the team's workflow.

The Upgreat Solution

Upgreat has supported the client since the first restaurant, developing technical layouts, supplying kitchen and bar equipment, creating refrigeration solutions and support areas, and monitoring the concept's evolution across new units.

Based on the experience of the first location, improvements were introduced in subsequent restaurants. A key example was the development of worktables with a special depth of 90 cm, allowing rice cookers and bean preparation to be accommodated at the back while maintaining a useful work area at the front.

Solutions were also implemented to speed up service, notably protein holding cabinets, which preserve grilled products at optimal temperatures and reduce operational pressure during peak hours.

To ensure maximum performance and operational durability, we integrated equipment and materials from leading international brands, including refrigeration systems from Edenox (such as upright cabinets, refrigerated counters, and freezers), commercial dishwashers and grills from ATA, protein holding modules from Casselin, complementary equipment and heating lamps from Combisteel, and custom-made neutral stainless-steel furniture from Coolsteel.

Upgreat has acted as an ongoing technical partner, helping the chain evolve from unit to unit.

Our work is not limited to supplying equipment. It includes space analysis, layout adaptation, solution selection, operational detail improvement, and technical support within a framework of sustained growth.

Operational Impact and Results

Since the first restaurant in 2022, Fábrica da Picanha has maintained a rapid growth rate, currently operating its fourth restaurant in Massamá.

The relationship with Upgreat has consolidated over time, with growing trust between the teams and continuous improvement of the solutions applied in each new unit. The brand is now preparing to move towards a franchising model, and counts on Upgreat as a partner in this expansion process.
